Our family loves Mexican style food, whether it’s tacos, burritos, quesadillas, enchiladas, guacamole, or even just tortilla chips and salsa, we love it all. This recipe is one that I like to fall back on when the fridge is bulging with leftovers, it’s hot out, and I don’t want to heat up the kitchen. It’s also a great recipe to involve the kids. Oh, and they give this a huge two-thumbs up rating.
You’ll Need:
Leftovers: (can be anything that will taste good wrapped up in a burrito)
hamburgers
bbq tofu
chili
grilled chicken or pork
tossed salad
rice
Thai or Chinese takeout
roasted veggies
etc…
Burrito wrap, warmed up
Cheese, shredded
Lettuce, shredded
Tomato, chopped
Lime, sliced
Cilantro, chopped
Salsa, mild for the kids, if you want it hotter, add hot sauce later
Sour cream, just a dab, don’t over do it
Olives, roughly chopped or whole
Onions, finely chopped
Black beans, rinsed
Rice, cooked
Guacamole, fresh
Jalapenos, sliced
Hot sauce, make it as hot as you want
Step 1: The Prepping
- Chop the various items up and place them each in a bowl
- Reheat any leftovers as necessary
- Warm the burrito in the microwave for about 30 seconds
- Arrange all of the items in bowls and get ready to fill up the burrito!
Step 2: The Filling
- Place the burrito on a plate
- Layer the items along the middle of the burrito. Tip, place the cheese on top of the warm items to optimal meltage
- Spread some sour cream along the outer edge to help seal it all up
Step 3: The Finale
- Fold over the bottom first up to about half the length of the burrito
- Fold over each side, overlapping the side with the sour cream
- Fold over the top, or leave the top open if it’s too full
- Eat and enjoy!
- For seconds, mix up the fillings for a completely different experience
