If you’re looking for a fresh fish that your kids are guaranteed to love then give Tilapia a try. It’s quite mild and easy to prepare. The only downside is that it’s a fatty fish so try not to add any more fat than necessary, such as, breading or butter. Feel free to add your own twist to the topping, you can’t mess this up.
You’ll Need:
- Tilapia – 1 filet per person
- Feta cheese – 2 cups
- Tomatoes – 2 medium
- Kalamata (Greek) Olives – 1 cup
- Garlic – 4-6 cloves
- Onion – 1 medium
- Olive oil – 2 tbsps
- Rice – (1/2 cup per person)
- Salt and pepper
- 10 minutes to prep
- 15 minutes to cook
- oven heated at 400 F
Prepare the Topping (8 min)
- Dice the onion and garlic
- Chop the olives
- Saute the onion, garlic, and olives with 1 tbps of olive oil until the onions just start to sweat
- Remove from the heat and let cool for about 5 mins
- Dice the tomatoes
- Crumble the feta
- Mix the tomatoes and feta together
- Once the olive/onions have cooled somewhat, add to tomato/feta mixture
- Rinse and pat dry the filets
- Cut any large filets into individual portions
- Season with salt and pepper
Prepare the Rice (10 min)
- Make rice according to the box
- I like to use the rice in a bag, ready in 10 minutes and no sticky mess
Putting it all together (15 min)
- Place the fish filets evenly spaced on an aluminum-lined baking sheet or pan
- Top the fish with a generous portion of the topping
- Don’t worry if some of the topping falls off
- Place in the pre-heated oven for about 10 minutes until fish easily comes apart with a fork
- Your rice should be done by now
- Plate a serving of rice and place a filet on top
- Enjoy with a crisp white wine, like a Finger Lake’s Riesling or Pinot Gris
