Fish Curry in a Hurry
This recipe is from one of my favorite chefs, Jamie Oliver. His new cookbook features easy meals with only 5 ingredients. I try to use this philosophy for coming up with a weeknight meal. A protein, a couple vegetables, a sauce, and a starch. This fish curry recipe is perfect. It uses some pre-made sauces which really cuts down on the time and gets the food on the table, in a hurry.
Prep time: 10 minutes
Cooking time: 20 minutes
Ingredients (for 6 servings)
- 1 large bunch of cherry tomatoes, sliced in half
- 1 clove of garlic, sliced
- 1 large onion, cut into large pieces
- 2 green peppers, cut into large pieces
- 2 white fish filets, cut into 2 inch pieces
- 1 can of coconut milk
- 2 tbsps of curry paste (Patak or similar)
- 1 tbsp of lime pickles (Patak or similar)
- 1 cup of cilantro, chopped
- Salt, pepper, olive oil
- 1 serving of rice per person
- Naan for dipping
Steps:
- Pre-heat large sauce pan
- Add olive oil and tomatoes, skin down
- Add onion, green pepper, and garlic and saute for a few minutes
- Add fish and cook for about 10 minutes, turning a few times
- Stir in curry paste and lime pickles
- Stir in coconut milk
- Season to taste with salt and pepper
- Simmer for about 5-10 minutes until thickens
- Serve over rice and with a piece of naan
- Top with some cilantro
- Enjoy!
