Shakshuka with Feta
This Mediterranean dish is so simple yet packs in the flavor! One pan dishes make a weeknight meal come together quickly and clean up a snap. You can make this mild or spicy, or get two cast iron pans and make one each! Serve with rice or couscous and some good bread for dipping and you won’t be disappointed.
Prep time: 10 minutes
Cooking time: 20 minutes
Ingredients (for 6 servings)
- 2 red or green peppers, sliced
- 3 Garlic cloves, sliced
- 1 large onion, diced
- 3 tomatoes, sliced
- 2 tbsp tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ? teaspoon cayenne (for spicy version)
- 1 Tsp of salt and pepper
- 1 Tbsp olive oil
- 6 eggs
- 1/4 cup cilantro, chopped
- 1 cup feta cheese
- Fresh bread
Steps:
- Heat cast iron pan medium/low with the olive oil
- Saute onion, garlic, and red pepper
- Add tomatoes and tomato paste
- Add paprika, cumin, and cayenne pepper
- Simmer for about 10 minutes until vegetables are tender and sauce thickened
- Stir in feta cheese
- Gently crack eggs over tomatoes
- Season with Salt and Pepper
- Cover for about 5 minutes until eggs are set but still runny
- Top with cilantro and serve with rice or couscous and some bread
- Enjoy!
