Anything over pasta is my go-to weeknight meal. Grab a few veggies, a protein, and presto, you have a meal. We typically use chicken but switching it up with shrimp is a nice change of pace. Buy the shrimp fresh if you can but frozen works too. Just remember to thaw them beforehand.

Cooking time : 20 minutes
Ingredients (for 6 servings)
Entree: Shrimp Scampi with Summer Squash over Pasta
- 2 pounds shrimp, peeled & deveined
- 1 medium onion, diced
- 3 garlic cloves, thinly sliced
- 1 cup white wine
- 1 lemon, sliced in wedges
- 2 Tbsp butter
- 1 cup parsley, chopped
- 2 summer squash, thinly sliced
- 1 Tsp Garlic powder
- 1 Tbsp Olive Oil
- Salt/Pepper to taste
- 1 lb of pasta, any kind works with this dish
- Optional for heat, 1 tsp red pepper flakes
- Crusty bread
Steps:
- Heat butter and olive oil in large skillet
- Add garlic and onion and cook for a few minutes
- Add white wine and bring to boil
- Lower heat and simmer to let wine reduce by about a half
- Add squash and cook for 2 minutes
- Add shrimp and cook for 2-4 minutes until pink
- Stir in parsley, lemon slices (squeeze a few of them), and pasta
- Serve with generous pieces of bread for all that yummy sauce
Pasta:
- Heat pot of water and don’t forget to add a pinch of salt
- Once boiling, add pasta
- Follow directions of your preferred pasta until cooked al dente
- Drain and set aside
