Ingredients (for 6 servings)
Entree: Orange and Ginger Salmon Filet
- 1 large salmon filet, skin on
- 1/2 orange, sliced thinly
- 1/2 orange, juiced
- 1 Tablespoon ginger
- 1 Tsp Garlic powder
- 1/2 Tsp Paprika
- 1/4 Tsp Cayenne pepper (optional)
- 1 Tbsp Olive Oil
- Salt/Pepper to taste
- Rinse the salmon and pat dry
- Set on foil, skin down
- Coat both sides with olive oil
- Season with garlic powder, ginger, paprika, salt, and pepper (and cayenne)
- Place orange slices on top
- Drizzle half of the orange juice on top
- Grill on medium heat for 10 minutes, until top is not translucent. DON’T FLIP OVER.
- Remove from grill and let rest for a few minutes.
- Drizzle remaining orange juice
- Remove from the skin
Heirloom Tomato, Avocado, and Corn Salad
- Mixed greens
- 2-3 heirloom tomatoes, diced
- 3 ears of corn, kernels removed
- 1 small red onion – diced
- 1 avocado – diced
- 1 Tbsp Balsamic Vinegar
- 1 Tbsp Olive Oil
- Salt & Pepper
- Combine all except the mixed greens in a bowl.
- Place a serving of mixed greens on a plate
- Top with the diced vegetables.
