This week’s live cooking show will be on the road in Austin, Texas! I’m traveling for work this Wednesday but didn’t want to leave my few fans (Hi mom!) without a live cooking show. I’m going to hang out with my good friends Joel & Jessica Goodman and we will be cooking a delicious Texas-style dinner. Joel will be providing the grill and the bread for this meal. He’s been baking bread and you can see some of his creations on his website, Bakehat. So put on your boots and your cowboy hat and join us! Yeehaw!

Cowboy BBQ Bacon and Jalapeno Sliders:
- Fresh ground beef and bacon (1 1/2 lbs of beef and 1/2 lbs of bacon)
- 1 Egg
- Worcestershire Sauce (1 Tbsp)
- Garlic powder (1 tsp)
- Salt and Pepper to taste
Toppings:
- 1/2 lbs of bacon (about 6 slices)
- Pickled jalapenos (1/2 cup)
- Cheddar cheese (about 1/2 lb)
- BBQ Sauce (1/2 cup)
Step 1: Place ground beef and bacon in a large mixing bowl and add egg, Worcestershire sauce, garlic powder, and S&P. Mix well with your hands. Make small patties about the size of large meatball in the palm of your hand
Step 2: Top the sliders with 2-3 jalapenos, then wrap with a slice of bacon. Brush with BBQ sauce
Step 3: Cook on medium heat, on top of foil. About 3 minutes each side. Only turn once and be careful not to burn the bacon.
Step 4: Top with cheddar cheese and another dollop of bbq sauce. Remove from heat once cheese is melted.
Grilled Mexican Street Corn
- Corn (1-2 ears per person, husk removed)
- Mayo (1/4 cup)
- Sour cream (1/4 cup)
- Cotija or queso fresco cheese (1 cup, crumbled)
- Ancho or guajillo chili powder (1/2 tsp)
- Garlic (1 clove, finely minced)
- Cilantro (1/4 cup, finely chopped)
- 1 lime (cut into wedges)
Step 1: Shuck the corn and trim ends. Grill the corn on medium heat for about 8 minutes, turning frequently
Step 2: In large bowl, combine well the mayonnaise, sour cream, cheese, chili powder, garlic, and cilantro.
Step 3: When corn is done, remove from heat and evenly coat con on all sides with cheese mixture.
Step 4: Sprinkle with extra cheese and chili powder and serve with lime wedges.
German Potato Salad
- Red or Yukon potatoes (2 lbs, rough peeled)
- Red onion (1 large, diced)
- Apple Cider Vinegar (1/4 cup)
- Bacon (4 slices, cut into pieces)
- Parsley (1 Tbsp, chopped)
- Water (2 Tbsp)
- Sugar (2 Tbsp)
- Salt and Pepper to taste
Step 1: Wash and rough peel the potatoes. Cut into cubes and place in pot with water and a pinch of salt. Cook into fork tender, about 10 minutes.
Step 2: While grill is heating, place bacon into cast iron pan and cook into crispy
Step 3: Dice onion and parsley
Step 4: Remove bacon and add onion. Once onion is translucent, add vinegar, water, sugar, salt and pepper
Step 5: Once water is boiling, add potatoes, parsley, and half the bacon. Heat through for a few minutes
Step 6: Remove from heat and add the rest of the bacon
