Live Cooking Show – Episode 3 (March 29, 2017)
This is one of my favorite pizzas. Enjoy dueling flavors of spicy Sriracha and cool blue cheese in the same bite. It’s really quick and easy for a weeknight meal. If your kids aren’t into spicy food then make half or quarter of the pizza without the Sriracha or add BBQ sauce. Serve with a fresh salad and presto you have a weeknight meal!
Shopping List:
- 2 Boneless chicken breasts (or a rotisserie chicken)
- 1 fresh pizza dough (Whole wheat from Wegmans is our favorite)
- 2 cups shredded Mozzarella cheese
- 1 cup creamy blue cheese dressing
- 2 Tbsp Sriracha
- 1/2 large or 1 small sweet onion
- 1 Tbsp olive oil
- Salt, pepper, garlic powder
Step 1: Prepare the onion and chicken
- Preheat oven to 400 degrees
- Slice the onion paper-thin
- Cut chicken into bite-sized pieces
- Heat olive oil in saute pan
- Add onion and chicken
- Cook for 10 minutes until chicken is fully cooked
- Take off heat and add some Sriracha until coated. (remove some chicken if making a non-spicy version)
If using a rotisserie chicken; pull apart and set aside. Cook onions as described above. Combine onion and Sriracha to pulled chicken.
Step 2: Prepare the dough
- Make sure the dough is at room temperature. You might need to set out earlier in the day.
- Spread the dough on the baking sheet
- Spray with olive oil spray or coat with olive oil
- Flip the dough over so olive oil side is on the bottom
Step 3: Prepare the pizza
- Spread blue cheese on the dough
- Cover the blue cheese with mozzarella cheese
- Cover the mozzarella cheese with the Sriracha chicken
- Add more mozzarella cheese
- Spray the crust with olive oil and sprinkle garlic powder all along the crust
- Add a few decorative lines of Sriracha to finish the pizza
Step 4: Cook the pizza!
- Cook for about 20 minutes
- Check the bottom of the pizza to make sure it’s golden brown
Step 5: Serve the pizza
- Remove the pizza from the oven and let rest for 5 minutes
- Cut and enjoy!
Grape and Goat Cheese Salad
- 1 box of mixed greens
- 2 cups sliced grapes
- 1 cup goat cheese
- Walnuts or pecans
Top the mixed greens with the grapes, goat cheese, and nuts.
