I like pork butts and I cannot lie. Sorry, I couldn’t help it. So, this was my first attempt at pulled pork and it came out great. It’s really easy and inexpensive, and we ate this for at least two meals. The kids gave this two thumbs up!
You’ll need:
- 1 pork butt or shoulder butt roast (at least 3lb)
- 2 medium/large onions
- Seasonings for rub (use what you have on hand)
- 2 Tbsp Horseradish Mustard
- 2 Tbsp Yellow Mustard
- 2 Tsp Garlic powder
- 2 Tsp Garlic & Herb Spice
- 2 Tsp Cajun Spice rub
- Salt & Pepper
- 1 cup of water
- 1 bottle of BBQ sauce
- Cole-slaw
- Sandwich rolls
Rub It
- Trim most of the fat from the pork butt and discard
- Rub the pork with the mustard
- Rub in the seasonings
- This can be done ahead of time and left overnight in the fridge
Set It
- Cut the onions into large rings
- Place the onions in the bottom of the crock pot
- Add the cup of water
- Place the pork on top of the onions
- Add the rest of the onions on top of the pork
- Cover and cook on low for 6-8 hours (2-3 hours a pound)
- You’ll know it’s done when the shoulder bone comes cleanly out
Pull It
- Remove the pork from the crock pot
- Remove the onions and liquid (Save this for soup and make another meal!)
- With two forks, pull the pork apart
- Put the pork back in the crock pot
- Pour the entire BBQ bottle and mix well. (My son picked out Guy Fieri’s BBQ sauce)
Eat It
- Slice your sandwich rolls
- Add the pulled pork
- Top with cole-slaw
- Serve with fries and a frosty beverage
- Enjoy!
