Chicken is a very versatile ingredient. There are probably thousands of ways to cook it and you can season it with anything you have on hand. I choose curry and lime because the contrast really makes this dish interesting. Don’t you get tired of BBQ or Italian dressing? I know I do. I also prefer dark meat so when I saw this package of thighs for only $0.99 a pound, I had to buy it! This recipe will easily feed a family of 4 under $10.
Needs:
- 1 package of chicken thighs
- 1 lime
- 2 tbsps. of curry powder
- 1 tsp. Garlic powder
- 2 tbsps. of olive oil
- Salt & Pepper to taste
- Side of rice or couscous
- Vegetable of your choice
- 10 minutes prep
- 15 minutes cooking
- Serves 6 with leftovers
Step 1: Season the chicken
- Take off the skin
- Rinse, pat dry, and place in a large bowl or platter
- Add the olive oil and coat well
- Season with salt, pepper, and garlic powder
- Add the curry powder and make sure it’s covered evenly
- Zest the whole lime over the chicken
- Cut the lime in half and juice half over the chicken
- Toss the chicken and make sure it’s well seasoned
- Set aside
Step 2: Grill the chicken
- Heat the grill to medium/high
- Place the chicken on the grill and sear each side
- Cook for about 5 minutes on each side
- You’ll know it’s done when the chicken is firm but not too firm when pressed, and juices run clear
- You could use a meat thermometer, chicken should be around 165 degrees
- Place them on a plate
Step 3: Serve the chicken
- Juice the other half of the lime over the grilled chicken
- Prepare some rice or couscous and a side vegetable
- Serve and enjoy!
Hmmm… I wonder if it could feed a family of 5 for under $10??? There’s a new challenge. I guess you have a year or so to work on it. Sounds yummy, and i’ll have to try it!
